Lemony, lemony … I just made 16 squares and they were devoured. Definetly loved by guests and myself ! The taste is unique; maybe best compared to a modern lemon meringue pie where the concentrated lemon curd filling is the hit….

Basically, the squares are split and prepared into 2 seperate baking sections. The biscuit lemon zest base with a consistency similar to shortbread; followed by the second layer which is the lemon curd sweetened layer, also baked at a later stage.

The finishing touch is a heavy sprinkle of icing sugar to balance out the citron goodness…. definetly doing these again!
