Description

I came across this ‘Kirsch and Mandel Kuchen’ – Cherry and Almond Cake – in an Austrian recipe magazine and re-adapted it with an addition of dark chocolate chunks, chocolate glaze topped with a zesty mascarpone & greek yoghurt whip.

The taste and moistness of the cake are fantastic as butter is omitted in the recipe and replaced by whipped cream creating the fluffiness and texture. Finally, the semi-bitter, dark chocolate chunks contrasts with the sweet and soft cherry halves.
