Description

Summer strawberry season has finally arrived and what better way to use these succulent strawberries…..a creamy and light summer dessert to be enjoyed in the sun.

The cheesecake base is a strawberry biscuit crumb mixed with coconut shreds. This is then topped with fresh mascarpone cream mixed with lemon juice, a layer of fresh pureed strawberries and another layer of cream with a final strawberry topping.
