Description
Angel cake; named after its airy lightness that was said to be the “food of the angels”, is a type of sponge cake that first became popular in the U.S. in the late 19th century. Made with 12 eggwhites and absolutely no fat content, this sponge is definitely the lightest cake I ever made.
I flavoured this cake with almond essence and then sandwiched it with blackcurrant apple jam and finally frosted with a sweet vanilla glaze.
