Description
Alternating layers of passionfruit curd, sponge, whipped cream and soft meringue make for this lovely Spring-time cake.
I started off by making a freshly made passionfruit curd which is made of 11 passionfruits, eggs, butter and sugar cooked together to create a creamy and tangy curd.
The base layer of the cake is a lemon zested sponge topped with a soft oven baked meringue. This is then covered with the passionfruit curd, whipped cream and then a final layer of the lemon sponge and finally more light meringue.
