Since our visit to Hawaii, I have a particular love for macadamia nuts so I am including them in my latest goodies…..these gooey Chocolate brownies turned cupcakes are made with 70% cocoa chocolate, chopped macadamia nuts, butter and very little flour.
The cupcakes will collapse in the middle when cooling down allowing for a dollop of maple syrup frosting in the centre. The syrup is combined with cream cheese and more chopped macadamia nuts. Sticky maple syrup makes for the gooeyness of these muffins and the chopped dark chocolate chunks combined with cocoa powder gives the intense chocolate bite.
